Grilled Corn Salsa

Prep Time: 20 mins

Ingredients:

2 bags of frozen roasted corn

1 container of precut mango

4 roma tomatoes diced

2 diced fresh jalapeños

1 can rinsed black beans

1/2 chopped red onion

3 TBS olive oil

2 TBS red wine vinegar

2 tsp salt

2 tsp cracked pepper

1 TBS paprika

1/2 cup of Cotija Cheese

One Handful of chopped fresh cilantro

Directions:

1) In a skillet cook Frozen corn with the rinsed beans until heated through

2) Drain off water from cooking

3) Combine all ingredients in bowl and refrigerate until ready to serve *allowing to marinate for at least 2-3 hours will really elevate the flavor!
